Mexican Sauce

Ingredients:
3 large tomatoes
5 serrano (green) chilies
1 onion
1 sprig fresh coriander
3 tablespoons olive oil
salt and pepper

Method:
Rub the chilies between hands then toast. Chop the raw tomatoes, onion, coriander and chilies.
Mix together with the oil, salt and pepper.
